These are absolutely delicious and amazing! And there are so many ways to make them.
I just made these for meal prep this week and I tried to keep my eye on exactly how I did it (I don't generally follow a recipe). So here it goes.
What you will need:
- Muffin tin - doesn't matter what size as you can adjust the recipe for the amount of muffins you want to make
- Eggs
- Egg whites (if you want them)
- Veggies of your choice
- Seasonings of your choice
- Greek yogurt (if you want it, they are good without as well)
You will need 1 egg per muffin that you are making (i.e. 12 muffins is 12 eggs).
I made 12 muffins so here is what I used.
- 6 Eggs
- 6 Egg whites (measured from the carton, I use Egg Beaters from Costco)
- Handful of peppers (I have a mixture or red, green, yellow, and orange)
- Onion
- 1 cup of Greek Plain Yogurt (I use the Kirkland brand from Costco)
Mix the eggs and egg whites in a bowl and add the yogurt to it after the eggs are mixed. If you are adding seasonings of sorts you can do it now or do it when the mixture has been poured into the tin.
Put the veggies in the muffin tin - I find it is more evenly distributed when placed in the tin versus mixing it in with the egg mixture.
Pour the egg mixture into the muffin tin and I fill it to the top of each one.
Have your oven preheated to 350* degrees. Cook for 30 minutes.

You can eat these cold or you can put them in the microwave to reheat. I also like to top mine with a little bit of salsa when I'm eating them for a little added zing.
